As a frugal household, leftovers are not allowed to go to waste here. Sometimes it can get a little boring eating them though, so I’m always looking for creative ways to turn them into a new meal. After having a delicious roast beef the other night, we had quite a bit left (it was a HUGE roast) and we needed a new leftover roast beef recipe. After thinking for a little bit, I decided to make sloppy joes with a little of the meat since I had everything on hand.
Start by chopping up your leftover roast beef & getting all your other ingredients ready (scroll down for printable recipe). A meat chopper like this one has become one of my favorite kitchen tools to save time for this and cooking up ground meats! Combine everything in a medium sized pan over medium heat. Most of your basic pan sets should have something the size you need. It just needs to be big enough to work with the roast to chop it up nicely.
Stir occasionally until the brown sugar is dissolved. Bring to a boil & then reduce to low heat. Simmer and stir occasionally until the onions are soft. Serve warm on buns with chips, a fresh salad, or some steamed veggies for a complete meal.

Homemade Sloppy Joes With Leftover Roast Beef
Ingredients
- 1 - 1.5 lb precooked pot roast chopped
- 1/4 cup Worcestershire sauce
- 1/4 cup apple cider vinegar
- 1/3 cup light brown sugar
- 1/2 cup ketchup
- 1 small white onion peeled and diced
- 1 teaspoon garlic minced
Instructions

Combine all ingredients into small pot. Heat over medium heat.

Stir occasionally until brown sugar is dissolved.

Bring to a boil and reduce heat to low.

Simmer and stir occasionally until onions are soft. This should take about 10 minutes.

Serve warm on buns. Tastes great with mustard!
