Sour Cream Banana Muffins

Ingredients

  • 3 ripe bananas mashed
  • 1 C. sugar
  • 2 eggs
  • 1/2 C. butter softened to room temperature
  • 2 C. flour
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 4 tbs sour cream

Instructions

  1. Preheat the oven to 350 degrees and line a 12 count muffin tin with liners or use a non-stick cooking spray.
  2. Combine the mashed bananas, sugar, softened butter, eggs, sour cream and vanilla, mixing well.
  3. Slowly fold in the flour and baking soda.
  4. Fill each muffin well about 3/4 of the way.
  5. Bake 20-22 minutes.
  6. *Makes approximately 12 muffins
