Sunflower Seed Cookies
Looking for a new cookie recipe to try this spring or even for Easter? I have one for you to check out. It is a recipe for sunflower seed cookies. The reason I say these would be great for Easter is because we use pastel chocolate covered sunflower seeds to get that extra pop of color.
If you wanted to make these sunflower seed cookies any other time of your, you could use regular chocolate covered sunflower seeds. And they would not be so spring looking. Or you could even go with other colors to make them for other holidays.

Sunflower Seed Cookies
Ingredients
- 3/4 cup salted softened butter
- 1/4 granulated sugar
- 3/4 cup packed light brown sugar
- 1/2 Tablespoon vanilla extract
- 1 Egg
- 2 Cups all purpose flour
- 1 teaspoon baking soda
- 2 teaspoon cornstarch
- 1 1/4 Cup pastel chocolate covered sunflower seeds
Instructions

Preheat your oven to 350° in line a baking sheet with parchment paper

In a large mixing bowl beat together your softened butter, sugar, and light brown sugar until light and fluffy

Then quickly mix in your vanilla extract and egg

In a separate mixing bowl, combine your flour, baking soda, and cornstarch and mix

Now mix your flour mixture into your butter mixture until you have a thick cookie dough (it will seem crumbly at first, keep mixing, it will stick)

Slowly fold in your sunflower seeds

Form your dough into small cookie dough balls and place onto your baking sheet

Bake for 8-9 minutes and let cool on your baking sheet
