Sour Cream Banana Muffins
Nothing like fresh baked banana muffins! Did you know that you can make them with sour cream? It makes for a super yummy muffin packed with flavor.
This recipe is pretty easy to make and will make about 12 muffins. You can either use a muffin tin with liners or use it with a nonstick baking spray.
This recipe works best if you have really ripe bananas and not on the green side.

Sour Cream Banana Muffins
Ingredients
- 3 ripe bananas mashed
- 1 C. sugar
- 2 eggs
- 1/2 C. butter softened to room temperature
- 2 C. flour
- 1 tsp vanilla
- 1 tsp baking soda
- 4 tbs sour cream
Instructions

Preheat the oven to 350 degrees and line a 12 count muffin tin with liners or use a non-stick cooking spray.

Combine the mashed bananas, sugar, softened butter, eggs, sour cream and vanilla, mixing well.

Slowly fold in the flour and baking soda.

Fill each muffin well about 3/4 of the way.

Bake 20-22 minutes.
