Refried Bean Enchiladas Freezer Meal Recipe

This easy Refried Bean Enchilada Freezer Meal recipe is a perfect use for your favorite discount canned foods, all while staying in budget. We love the simple flavors of this dish, but you can always bump up the flavor with a bit more spice, or your favorite vegetables.
These enchiladas are a wonderful vegetarian dish that everyone will enjoy. We like to serve them with a simple side salad, some sour cream and tomato, avocado or green onion to top. Kids and adults alike love the rich flavors of these enchiladas that also freeze well.
Two Options For Freezing:
Cook, cool and transfer into freezer safe storage. Label well and reheat in microwave or oven as needed.
Assemble in freezer to oven safe casserole. Label well and cook at 375 degrees for 45 minutes to 1 hour as needed.
Refried Bean Enchiladas
- 15 Corn Tortillas
- 2 Cans Old El Paso Refried Bean Enchiladas
- ¼ Cup Old El Paso Mild Jalapeno's diced
- 1 Tablespoon Cumin
- 1 Teaspoon Chili Powder
- 1 Teaspoon Onion Powder
- 2 Teaspoon Garlic Powder
- 1 Teaspoon Salt
- 1 Cup Sour Cream
- 1 Cup Chicken Stock
- Juice of 1 Lime
- 1 Cup Shredded Cheddar Cheese
- Green Onion Tomato & Sour Cream for garnish
Preheat oven to 375 degrees
Spray 9x13” casserole dish with nonstick casserole
Mix together refried beans, jalapeno's and seasonings until well blended
Fill each tortilla with approximately 1 ½-2 tablespoons bean mixture rolling each into enchilada with rolled side facing down in casserole dish.
Mix together sour cream, chicken stock and lime. Pour over enchiladas.
Top with cheese.
Bake at 375 degrees for 30-35 minutes or until bubbling and cheese melted.
