These Rainbow Jello Poke Cupcakes are so moist & delicious, you’ll find yourself making variations of them for all special occasions! This rainbow poke cupcake recipe is inexpensive and very easy to make!
Roundup your ingredients. You’ll need cake mix (plus water, oil, and eggs) or your favorite homemade cupcake mix. Plus, you will need milk, butter, sugar, and green food coloring for the frosting, Airhead Extremes for the rainbows, and lime jello!
Start by making your cupcakes & letting them cool completely, then poke holes in them. I just use a fork to put in about 12-16 holes. Make sure you don’t push too far down or you will puncture the bottom. I go about 1/2 to 3/4 way down.
Now, make your Jello. Mix the powder & boiling water until completely dissolved. Add 1/2 cup of cold water and pour over each cupcake. Put them in the fridge for at least 15 minutes. While they are cooling I make the frosting, so it might be a bit longer, depending on how many times the twins need something.
Now, make your frosting & divide. You’ll need about 1/4 of it white and the rest green. Use a piping bag (or a ziplock bag with the corner cut off) to decorate the top of each cupcake green, then add white clouds & bend the airheads strip between the two clouds to form the rainbow.

Rainbow Poke Cupcakes
Ingredients
- 1 box White Cake Mix
- 1 cup Water
- 1/3 cup Vegetable Oil
- 3 Eggs
- 3 oz Lime Gelatin
- 1 cup boiling Water
- 1/2 cup cold water
- AirHeads Extremes
- 2 tbsp Milk
- 1 cup softened Butter
- 4 cup Powdered Sugar
- Green Food Coloring

Make cupcakes according to box directions

After baking move to wire rack to cool completely.

Poke holes in each cupcake

Mix Jello and boiling water stir until dissolved.

Add 1/2 cup cold water and pour over cupcakes.

Refrigerate for at least 15 minutes.

In a large bowl, cream the butter.

Beat in the milk mixing until fluffy.

Transfer 1/4 of the icing to the corner of medium size zipper bag, try to minimize trapped air and close. Clip a small piece off the corner to pipe. Set aside.

Add several drops of green food coloring to remaining icing and mix until color is blended.

Transfer icing to the corner of large size zipper bag. Clip a small piece off the corner to pipe.

Cut each strip of the airheads into 2 1/2 - 3 inch lengths.

Ice the top of each cupcake with green icing.

Pipe a white cloud on each side of the green and insert the airheads strip between them to make a rainbow.
