Looking for something different for lunch? Or maybe need an idea to serve as a snack when family and friends come over? You should check out this recipe for homemade pork salad!

You can either use left over pork tenderloin if you have some already made, or the directions below will also tell you how to make it in the slow cooker. I like that if you need to make the tenderloin, it can actually work as a frugal dinner idea the first night you make it, then save the leftovers for this Homemade Pork Salad for lunches!

One of the nice things about this recipe is you don’t really need any special kitchen tools to make it. A food processor or a blender makes it a little easier to get it into the nice texture, but if you don’t have one, you could just use a cutting board and chop it up finely by hand.

This is great either on a sandwich or to have with some crackers as a snack. I prefer the crackers personally, but with a nice, soft bread, it could really hit the spot that way as well!

Homemade Pork Salad

Course Pork

Ingredients

  • 12 oz slow cooked pork tenderloin
  • 1 cup mayonnaise
  • 1 cup dill pickle relish
  • 1 small chopped onion

Instructions

  1. Place your pork tenderloin in a slow cooker and cook on high for 4 hours or low for 8 hours.
  2. Let your pork tenderloin cool and place in the refrigerator for an hour.
  3. Shred your cooked pork with a fork and place in a food processor or blender and pulse in small portions until chopped (do not fully blend as pork will become mushy)
  4. Place your chopped pork in a mixing bowl and mix in your mayonnaise, fill pickle relish, and chopped onion.
  5. Season with salt and pepper.
  6. Enjoy on Hawaiian rolls, crackers, or a sandwich.
