Hearty Beef StewThis crock pot beef stew will quickly move to the top of your cold weather recipe rotation. Instead of your basic beef, carrots, and potato stew we’ve stepped it up a notch with a few extra veggies and then melted cheese over the top.  Serve it with your favorite crusty bread for a filling, delicious meal.

This beef stew recipe is easy to throw together and you can change it up to fit your taste.  Add parsnips or brussels sprouts. Leave out the squash or sweet potato. Whatever you have on hand works.  One way I save on beef stew is by buying steak or a roast on sale and cutting it myself. If you’ve never cut it your own stew meat, this video has a great walk-through.
