This crock pot beef stew will quickly move to the top of your cold weather recipe rotation. Instead of your basic beef, carrots, and potato stew we’ve stepped it up a notch with a few extra veggies and then melted cheese over the top. Serve it with your favorite crusty bread for a filling, delicious meal.
This beef stew recipe is easy to throw together and you can change it up to fit your taste. Add parsnips or brussels sprouts. Leave out the squash or sweet potato. Whatever you have on hand works. One way I save on beef stew is by buying steak or a roast on sale and cutting it myself. If you’ve never cut it your own stew meat, this video has a great walk-through.

Hearty Crock Pot Beef Stew
Ingredients
- 2 lb chunk beef cubes
- 1 Packet of Beef Stew Seasoning
- 2 Tbsp Minced Garlic
- 1 onion chopped
- 4 beef bouillon cubes
- 4-6 cups of water until beef cubes are ¾ covered in the water.
- 4 carrots
- 1 cup chopped squash
- 2 sweet potatoes
Instructions

Add beef, garlic, onion, bouillon cubes, and beef stew seasoning. Add enough water to cover about 1/4 the way. Cover and power slow cooker on High for 5-6 hours.

Add carrots, squash, and potatoes.

Cook for 1 hour more

Add cheese to individual bowls if desired and broil for 5 minutes or until golden brown on top.
