Chocolate Chip Zucchini Cookies

Looking for a new and more healthy cookie recipe to try? I have one I am pretty sure you are going to love. It is a recipe for Chocolate Chip Zucchini Cookies!

These chocolate chip zucchini cookies are a great way to get that sweet treat and get in some veggies at the same time. Plus if you have kiddos that are picky eaters, what a better way to sneak in some veggies then with a chocolate chip cookie?? They will never know!

You can use a normal cookie sheet to make these, or you could also use the silicone baking mats.

Chocolate Chip Zucchini Cookies

Course Cookie
Prep Time 25 minutes
Cook Time 10 minutes
Total Time 35 minutes
Servings 36

Ingredients

  • 1 1/2 C. shredded zucchini
  • 1 tsp vanilla extract
  • 3/4 C. sugar
  • 1 egg
  • 1/2 C. butter softened to room temperature
  • 1 1/2 C. flour
  • 1 tsp baking soda
  • 3/4 C. chocolate chips
  • 1 tsp. cinnamon
  • 1 C. quick cooking oatmeal

Instructions

  1. Preheat the oven to 350 degrees.
  2. Combine the softened butter, vanilla extract, sugar and egg mixing well.
  3. Slowly fold in the dry ingredients.
  4. Add in the shredded zucchini and chocolate chips.
  5. Place the mixture in the fridge for 20 minutes to set up.
  6. Remove from the fridge and drop by rounded tablespoon onto your baking sheets about 2"-3" apart.
  7. Bake 10-12 minutes.
  8. Remove from the oven and let cool.
  9. *Makes approximately 3 dozen cookies
