Did someone say chocolate and cheesecake? These Chocolate Chip Cookie Cheesecake Bars are just what the doctor ordered for this busy mom. There is always room for a yummy dessert, and these definitely hit the spot!
This recipe is a favorite for potlucks, parties and sharing with friends. It has a few steps, but in the end the result is so delicious and beautiful everyone will think you are a rock star in the kitchen. Of course, that is if you manage to not eat all of these chocolate chip cookie cheesecake bars before you make it to your next event! They are that good!
These are a two part bar that begins with a basic delicious cookie dough as crust and a classic cream cheese filling on top. You’ll need to get your supplies out and prep your baking pan ahead of time. Lining your pan with parchment paper first will save you a lot of time when it comes to cleanup and makes serving them so much easier!
Mix up your classic cookie dough batter (scroll down for printable recipe or use your favorite chocolate chip cookie dough recipe) and press 2/3 into the bottom of your pan in an even layer. If the kids are around, you can have them help you press this down into the pan. Kids always enjoy snagging a bit of raw cookie dough so you might want to watch and make sure they don’t eat more than they put into the pan.
Your cream cheese filling will mix up quickly and easily as long as you have already softened your cream cheese. Set it on the counter for at least half an hour. Simply mix the cream cheese, egg, vanilla, and sugar together until well combined.
Now you can crumble the rest of that cookie dough over the top of the bars. This makes the best incorporated yummy bits of cookie in your cheesecake ever.
Chocolate Chip Cheesecake Bars
- 2 cup Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2/3 cup softened Butter
- 1/2 cup Sugar
- 2/3 cup Brown Sugar
- 1 Egg
- 2 tsp Vanilla
- 2 cup Chocolate Chips
- 8 oz softened Cream Cheese
- 1/2 cup Sugar
- 1 Egg
- 1 tsp Vanilla
Preheat oven to 350.
Line a 9×9-inch square baking pan with parchment paper or aluminum foil and spray with nonstick spray.
Whisk together flour, baking soda and salt for crust.
Cream together butter, brown sugar and sugar until fluffy.
Add egg and vanilla and whip to incorporate.
Add flour mixture and mix until incorporated.
Fold in chocolate chips.
Press 2/3 of the mixture into the bottom of the prepared pan to form an even layer.
Combine filling ingredients and beat until blended.
Spread filling over the cookie dough layer and level.
Crumble remaining crust dough over the filling layer.
Bake for 40 minutes, or until cheesecake is set and cookie dough has browned.
Allow to cool completely and chill before slicing.
