This Cheesy Bacon Ranch Chicken Casserole is one of our family favorites. Not only is it hearty enough to satisfy the hungry man in your life, but it is super kid friendly, delicious, and so easy to make!
What’s not to love about combining your favorite ingredients to make this Cheesy Bacon Ranch Chicken for your family this week? This is a great casserole dish that has all the things you want in a tasty meal. Bacon, cheese, chicken and potatoes combine to make that classic dish your kids will rave over for weeks after.
There are a few steps in this recipe, but it isn’t really that time intensive and so worth it! Start by making your marinade with Greek yogurt and ranch seasoning, then marinating the chicken for at least an hour. You can also do this the night before to save time on a busy night.
Now break out your cast iron skillet & fry up your bacon. If you don’t have a cast iron skillet, that’s okay. It just helps the bacon cook more evenly and adds a little extra iron to your diet. Next cook your potatoes and onions in the bacon grease. You just want to get some color and tenderness on the potatoes and onions. If you prefer the taste of caramelized onions, you can throw them in for a minute or two before adding the potatoes.
Next you transfer them to your casserole dish, top with the marinated chicken and cheese. Bake this casserole and watch as your family devours it in record time! Depending on what type of casserole dish you use, your cooking time could be less or more, so make sure to check the internal temp of the chicken!
Cheesy Bacon Ranch Chicken
- ½ Cup Plain Greek Yogurt
- 1 oz. Ranch seasoning mix
- 6 Chicken Thighs
- ½ lb. Bacon
- 1-1/2 lbs. Potatoes about 5, cut into ¼ inch slices
- 1 Red Onion thinly sliced
- 1 cup Colby Jack Cheese shredded
In a shallow dish combine the Yogurt and Ranch seasoning.
Put the Chicken into the Yogurt mixture, open the thighs and make sure everything gets coated. Let marinate at least one hour.
Preheat the oven to 350˚.
Cook the Bacon until crispy, remove to a paper towel to drain, then chop into ½ inch pieces.
Reserve 2 Tbsp. of the bacon grease and fry the potato slices in batches 1-2 minutes per side just to get a little color on them, then place in a large baking dish. Season with a pinch of Salt and Pepper.
Sauté the onion in the same pan as you used for the potatoes just until they are softened, about 2 minutes, spread across the potatoes.
Sprinkle the chopped bacon over the onions.
Place the Chicken thighs flat over the top of the potatoes and onions, season with a pinch of Salt and Pepper. Bake at 350˚ until the chicken is done, 35-40 minutes.
Top the Chicken with shredded cheese a few minutes before removing from the oven just so it melts evenly.
