BBQ Chicken Pizzas

It is getting to be that time of year when everyone starts to think about BBQ recipes. But have you thought about BBQ chicken pizzas? They are so yummy and super easy to make. Such a wonderful spin on your normal BBQ chicken.

For the crust on these BBQ chicken pizzas, we used pita bread. Different, right? It really turns this pizza to a light diet friendly type pizza.

You will be making these in the oven (or toaster oven) so you will need a cookie sheet to place your pizzas on while they bake.

BBQ Chicken Pizzas

Ingredients

  • 4 pita pieces of pita bread 4" in diameter
  • 1 cup chicken cooked and shredded
  • 6 tablespoons BBQ sauce
  • 8 tablespoons cheese shredded (I used white cheddar)
  • 4 black olives sliced
  • 2 tablespoons red onion thinly sliced
  • salt and pepper
  • Fresh cilantro if desired

Instructions

  1. Preheat oven to 400 degrees
  2. Spread each piece of pita bread with 1 1/2 tablespoons of BBQ sauce
  3. Add 1/4 cup of chicken to each pita
  4. Top the chicken with a few slices of black olive and red onion
  5. Finish with 2 tablespoons of cheese and a pinch of salt and pepper.
  6. Bake for 4-5 minutes, or until the cheese is thoroughly melted.
  7. Sprinkle with a few leaves of cilantro and serve
  8. Calorie Counts (per pizza)
  9. Pita bread: 110 per slice and 0 grams of fat
  10. Chicken: 51 calories and 1 gram of fat
  11. BBQ sauce: 45 calories and 0 grams of fat
  12. Shredded cheddar: 56 calories and 4 grams of fat
  13. Black olives: 6 calories and > than 1 gram of fat
  14. Red onion: 1 calorie and 0 grams of fat
  15. Total per pizza: 269 calories and appx. 6 grams of fat
  16. ** Notes: The nutritional information will vary from brand to brand. I used Trader Joe's pita bread, Kraft BBQ sauce, Sargento cheese, and Mario black olives.
