Dreading chicken again tonight? This Bacon & Pepper Jack Chicken Recipe is a great way to get your family interested in eating chicken again! It’s a great way to spice up chicken breasts without breaking the bank!

Bacon & Pepper Jack Chicken Recipe

Ready to fall in love with chicken again?  Try this easy Bacon & Pepper Jack Chicken Recipe.  It’s a budget friendly dinner that will have your family raving!  It only takes about 20-25 minutes to throw together, has a lot of flavor, but isn’t too spicy for little ones.

Pepper Jack Chicken

Start by gathering up all your ingredients. You need chicken breast (stock up when it’s on sale!), an onion, minced garlic, pepper jack cheese, BBQ sauce, bacon, and peppers. You’ll also need some flour to coat the chicken. You can use regular all-purpose flour or your favorite gluten free all-purpose flour.

Bacon on a George Foreman Grill

Cook your bacon.  You can use a George Foreman grill, cook it in a skillet, or bake them – whatever way is easiest for you!

Cook the onion, garlic, and peppers in a little of the bacon fat.

Pepper Jack Chicken Recipe

Cut the chicken so it’s about 1/2″ thick, then it in the flour and then cook for about 5 minutes per side.

Pepper Jack Chicken with Bacon

Put the chicken breasts in a baking dish (grease it first!) and add a little barbecue sauce on top.  Top each piece with some of the pepper & onion mixture, then cover with cheese & bacon.  Bake until the cheese is melted.

Bacon & Pepper Jack Chicken

Ingredients

  • 2 lb Boneless Skinless Chicken Breast
  • 6 slices Bacon
  • 1 tsp minced Garlic
  • 1/4 cup flour
  • Salt and Pepper to taste
  • 4 tbsp Barbecue Sauce
  • 4 oz Pepper Jack Cheese
  • 1 cup Multicolor Peppers cut into strips
  • 1/2 cup Onions cut into strips

Instructions

  1. Spray a baking dish with nonstick spray.
  2. Preheat the oven to 375.
  3. Fry bacon until cooked but not crisp.
  4. Drain bacon.
  5. Remove most of bacon grease leaving 1-2 tablespoons in skillet.
  6. Sauté peppers, garlic and onions over medium heat until tender.
  7. Remove vegetables and set aside.
  8. Split chicken breast halves to a thickness of about 1/2".
  9. Dip each piece in flour.
  10. Season with salt and pepper.
  11. Cook chicken in the skillet over medium heat for about 5 minutes per side side, until cooked through.
  12. Arrange the chicken breasts in prepared dish.
  13. Spread barbecue sauce over each chicken piece.
  14. Top with peppers and onions.
  15. Cover each with cheese and top with bacon.
  16. Bake for 6-7 minutes, until cheese is melted.
